Creamy Avocado Lime Dressing

  • Author: lila
  • Total Time: 10 minutes
  • Yield: 4 servings 1x

Description

This creamy avocado lime dressing is a delightful blend of fresh ingredients that elevates any salad or grain bowl. With its zesty lime kick and rich texture, it’s a versatile staple for your kitchen.

Ingredients

Scale
  • 1 ripe avocado (approximately 200g)
  • 1/4 cup Greek yogurt (or dairy-free yogurt for a vegan option)
  • 2 tablespoons fresh lime juice (about 1 medium lime)
  • 1 tablespoon olive oil
  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)
  • 23 tablespoons water (to thin, as needed)
  • Fresh cilantro leaves (optional, for garnish)

Instructions

  1. Start by cutting the ripe avocado in half. Carefully remove the pit, then scoop the flesh into a blender or food processor. Be cautious not to dig too deep to avoid scraping the skin, which can be bitter.
  2. Add 1/4 cup of Greek yogurt to the blender along with the avocado. This will give the dressing its creamy consistency. If you’re using dairy-free yogurt, ensure it's a thick variety.
  3. Next, squeeze in the juice of 2 tablespoons of fresh lime juice. To get more juice from your lime, roll it on the counter with your palm before cutting it in half.
  4. Pour in 1 tablespoon of olive oil for healthy fats. This will help enrich the flavor and keep the dressing smooth.
  5. If you prefer a hint of sweetness, add 1 tablespoon of honey or maple syrup at this stage. This is optional, so feel free to skip it if you like a tangier dressing.
  6. Now, add 1 minced clove of garlic, 1/2 teaspoon of ground cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. These spices will enhance the overall flavor of the dressing.
  7. Blend all the ingredients on high until smooth, about 30-45 seconds. Stop to scrape down the sides if necessary. You want a creamy, homogenous mixture without any lumps.
  8. Check the consistency of your dressing. If it's too thick, add 2-3 tablespoons of water, one tablespoon at a time, blending until you reach your desired thickness. The dressing should be pourable but still thick enough to cling to your salad.
  9. Once blended, taste the dressing and adjust seasoning as needed. You can add more salt, lime juice, or sweetener according to your preference.
  10. Transfer the dressing to a container and optionally garnish with fresh cilantro leaves. Serve immediately or refrigerate until needed. This dressing can be stored in an airtight container for up to 5 days.
