- Start by cutting the ripe avocado in half. Carefully remove the pit, then scoop the flesh into a blender or food processor. Be cautious not to dig too deep to avoid scraping the skin, which can be bitter.
- Add 1/4 cup of Greek yogurt to the blender along with the avocado. This will give the dressing its creamy consistency. If you’re using dairy-free yogurt, ensure it's a thick variety.
- Next, squeeze in the juice of 2 tablespoons of fresh lime juice. To get more juice from your lime, roll it on the counter with your palm before cutting it in half.
- Pour in 1 tablespoon of olive oil for healthy fats. This will help enrich the flavor and keep the dressing smooth.
- If you prefer a hint of sweetness, add 1 tablespoon of honey or maple syrup at this stage. This is optional, so feel free to skip it if you like a tangier dressing.
