- In a large mixing bowl, cream together 1 cup of softened unsalted butter, 1/2 cup of granulated sugar, and 1 cup of brown sugar until light and fluffy, about 3-4 minutes.
- Beat in 2 large eggs, one at a time, ensuring each is fully incorporated. Stir in 1 teaspoon of vanilla extract.
- In another bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving enough space for spreading.
- Bake the cookies in the preheated oven for about 10-12 minutes, or until the edges are lightly golden.
- While the cookies cool, melt about 1 cup of caramel candies with a splash of cream in a microwave-safe bowl, stirring until smooth.
- Once the cookies are completely cool, drizzle or spread a generous layer of the melted caramel over each cookie.
- Melt 1 cup of semi-sweet chocolate chips in the microwave (30 seconds at a time, stirring in between). Drizzle the melted chocolate over the caramel layer on each cookie.
