Ingredients

  • Medium to large sweet potatoes
  • Lean ground beef
  • Fresh champignons (or cremini or portobello mushrooms)
  • Fresh spinach (or frozen spinach, thawed and drained)
  • Yellow or white onions
  • Fresh garlic cloves
  • Grated cheese (such as cheddar or mozzarella, or nutritional yeast for a non-dairy option)
  • Salt
  • Pepper
  • Paprika
  • Nutmeg

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly. Pierce each potato with a fork several times to allow steam to escape. Place them on a baking tray and bake for 45-60 minutes, or until tender.
  3. While the sweet potatoes are baking, heat a skillet over medium heat. Add a splash of olive oil, then sauté diced onions and minced garlic until fragrant and translucent, about 3-5 minutes.
  4. Increase the heat to medium-high, add the ground beef, and break it apart with a spatula. Cook until browned, about 5-7 minutes. Stir in the chopped mushrooms and cook until they are softened, around 4-5 minutes.
  5. Incorporate the fresh spinach and stir until wilted. Season the mixture with salt, pepper, paprika, and nutmeg. Cook for another couple of minutes, then remove from heat.
  6. Once the sweet potatoes are cooked, remove them from the oven and allow them to cool slightly. Cut them in half lengthwise and scoop out some of the flesh to create a cavity. Mix the scooped-out flesh with the beef filling, adding half of the cheese. Spoon this mixture back into the sweet potato halves.
  7. Sprinkle the remaining cheese over the stuffed sweet potatoes. Return them to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes. Serve warm and enjoy your incredible filled sweet potatoes!
