Instructions

  1. Prepare the Chipotle Mayo: In a small bowl, combine 1/4 cup mayonnaise, 1 tablespoon minced chipotle peppers, and 1 teaspoon lime juice. Mix until smooth and set aside.
  2. Toast the English Muffins: Split 4 English muffins and toast them until golden brown, about 3-4 minutes.
  3. Cook the Eggs: Heat 1 tablespoon of butter or oil in a nonstick skillet over medium heat. Crack 4 large eggs into the skillet and cook for 4-5 minutes until the whites are set but the yolks are still runny. Season with salt and pepper.
