- 1 cup long-grain white rice
- 1 can French onion soup
- 2 sweet onions
- 1 cup shredded Swiss or Gruyère cheese
- 1 cup beef broth
- Fresh thyme
- Minced garlic
- Salt

- Olive oil or butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef. Break it up with a spatula as it cooks. Once fully cooked, drain any excess fat and set aside.
- In the same skillet, add a little olive oil or butter. Add sliced onions and cook over medium-low heat for about 15-20 minutes, stirring occasionally, until they are golden brown and caramelized.
- Stir in minced garlic and fresh thyme during the last 2 minutes of cooking the onions.
- In a large mixing bowl, combine the cooked ground beef, caramelized onions, uncooked rice, French onion soup, beef broth, and a sprinkle of salt and pepper. Mix well to combine all the flavors.
- Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly. Cover the dish with aluminum foil.
- Place the covered casserole in the preheated oven and bake for about 45 minutes.
- After 45 minutes, remove the foil and sprinkle the shredded cheese on top. Return the dish to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Once out of the oven, let the casserole sit for about 5-10 minutes before serving.
