  • 1 can French onion soup
  • 2 sweet onions
  • 1 cup shredded Swiss or Gruyère cheese
  • 1 cup beef broth
  • Fresh thyme
  • Minced garlic
  • Salt
  • Pepper
  • Olive oil or butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef. Break it up with a spatula as it cooks. Once fully cooked, drain any excess fat and set aside.
  3. In the same skillet, add a little olive oil or butter. Add sliced onions and cook over medium-low heat for about 15-20 minutes, stirring occasionally, until they are golden brown and caramelized.
  4. Stir in minced garlic and fresh thyme during the last 2 minutes of cooking the onions.
  5. In a large mixing bowl, combine the cooked ground beef, caramelized onions, uncooked rice, French onion soup, beef broth, and a sprinkle of salt and pepper. Mix well to combine all the flavors.
  6. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly. Cover the dish with aluminum foil.
  7. Place the covered casserole in the preheated oven and bake for about 45 minutes.
  8. After 45 minutes, remove the foil and sprinkle the shredded cheese on top. Return the dish to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  9. Once out of the oven, let the casserole sit for about 5-10 minutes before serving.
