  • Bone-in, skin-on chicken thighs
  • Salt
  • Pepper
  • Olive oil
  • 6 minced garlic cloves
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 pounds potatoes (Yukon Gold or Russet)
  • ½ cup heavy cream
  • ½ cup shredded cheddar cheese
  • 4 tablespoons butter

Instructions

  1. In a large skillet, heat a tablespoon of olive oil over medium-high heat. Season the chicken pieces with salt and pepper.
  2. Place the chicken skin-side down in the skillet. Sear for about 5-7 minutes until the skin is golden brown. Flip and cook for an additional 5 minutes. Remove the chicken and set aside.
  3. In the same skillet, add another tablespoon of oil if needed. Toss in 6 minced garlic cloves and sauté until fragrant, about 30 seconds.
  4. Pour in 1 cup of chicken broth, scraping up any brown bits from the bottom of the skillet. Bring it to a simmer.
  5. Return the chicken to the skillet, cover, and reduce the heat to low. Let it cook for about 30-35 minutes, or until the chicken is cooked through and tender.
  6. Once the chicken is done, remove it from the skillet again. Stir in 1 cup of heavy cream and let it simmer for a few minutes to thicken. If it’s too thick, you can add a little more broth.
  7. Season the gravy with additional salt and pepper to taste. Return the chicken to the skillet to coat it in the gravy before serving.
  8. While the chicken is cooking, peel and chop 2 pounds of potatoes into even-sized pieces. Place them in a large pot and cover with cold water.
  9. Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes. Drain and return to the pot.
  10. Add ½ cup of heavy cream, ½ cup of shredded cheddar cheese, and 4 tablespoons of butter to the potatoes. Mash until smooth and creamy.
  11. Season with salt and pepper to taste. For extra cheesiness, feel free to mix in more cheese or even some cream cheese for added richness!
