- 1 cup BBQ sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro (optional)
Instructions
- In a mixing bowl, combine the shredded chicken with the BBQ sauce, mixing well until the chicken is fully coated.
- Stir in the diced red onion and half of the shredded cheese into the chicken mixture.
- Place your large skillet over medium heat and add a tablespoon of olive oil. Allow the oil to heat until shimmering.
- Lay one tortilla flat in the skillet and spoon half of the chicken mixture onto one half of the tortilla. Top with a sprinkle of cilantro (if using) and a quarter of the remaining cheese. Fold the tortilla over to cover the filling.
- Cook the quesadilla for about 3-4 minutes on one side until it’s golden brown and the cheese begins to melt.
- Carefully flip the quesadilla using a spatula and cook the other side for an additional 3-4 minutes until it’s equally golden and crispy.
- Once both sides are cooked, remove the quesadilla from the skillet and let it sit for a minute. Slice it into wedges for easy serving, and repeat the process with the second tortilla.
