Watermelon Mint Sorbet

  • Author: lila
  • Total Time: 15 minutes
  • Yield: 4 servings 1x

Description

This watermelon sorbet is a refreshing treat perfect for hot summer days. With the natural sweetness of ripe watermelon and a hint of fresh mint, it captures the essence of summer in every bite.

Ingredients

Scale
  • 4 cups ripe watermelon, cubed and seeds removed (about 1 medium watermelon)
  • 1/2 cup granulated sugar
  • 1/4 cup fresh mint leaves, packed
  • 1 tablespoon freshly squeezed lime juice
  • 1/4 cup water
  • Pinch of salt

Instructions

  1. Start by cutting your watermelon into cubes. You’ll need about 4 cups, so aim for one medium-sized watermelon. Remove all seeds to ensure a smooth texture in the sorbet.
  2. Place the watermelon cubes in a blender. Add the granulated sugar, fresh mint leaves, lime juice, water, and a pinch of salt. Blend on high until the mixture is completely smooth, which should take about 30-45 seconds. Look for a vibrant, uniform color without any chunks.
  3. Once blended, taste the mixture to see if it’s sweet enough for your liking. If it’s not sweet enough, you can add a little more sugar and blend again for a few seconds.
  4. Pour the blended mixture into a shallow dish to help it freeze more quickly and evenly. Use a spatula to smooth the top. Cover the dish with plastic wrap to prevent ice crystals from forming.
  5. Place the dish in the freezer for about 2-3 hours. After this time, check the consistency. When it’s firm to the touch but not completely frozen, it’s time for the next step.
  6. Using a fork, scrape the frozen mixture to create a fluffy texture. This is where you can break up any icy chunks. Return the dish to the freezer for another hour.
  7. Before serving, let the sorbet sit at room temperature for about 5-10 minutes to soften slightly. This will make it easier to scoop. Use an ice cream scoop to serve into bowls or cones.
  8. Garnish with a few fresh mint leaves on top for a pop of color and extra flavor. Enjoy immediately for the best texture!
