- Start by cutting your watermelon into cubes. You’ll need about 4 cups, so aim for one medium-sized watermelon. Remove all seeds to ensure a smooth texture in the sorbet.
- Place the watermelon cubes in a blender. Add the granulated sugar, fresh mint leaves, lime juice, water, and a pinch of salt. Blend on high until the mixture is completely smooth, which should take about 30-45 seconds. Look for a vibrant, uniform color without any chunks.
- Once blended, taste the mixture to see if it’s sweet enough for your liking. If it’s not sweet enough, you can add a little more sugar and blend again for a few seconds.
- Pour the blended mixture into a shallow dish to help it freeze more quickly and evenly. Use a spatula to smooth the top. Cover the dish with plastic wrap to prevent ice crystals from forming.
- Place the dish in the freezer for about 2-3 hours. After this time, check the consistency. When it’s firm to the touch but not completely frozen, it’s time for the next step.
