- 2 eggs
- ½ cup milk
- ½ cup mango puree

Instructions
- Preheat the oven to 350°F (175°C).
- Line a standard cupcake pan with paper liners.
- In a large bowl, whisk together 1 ½ cups of all-purpose flour, 1 cup of granulated sugar, 2 teaspoons of baking powder, and a pinch of salt. Set aside.
- In another bowl, beat ½ cup of unsalted butter until creamy. Gradually add in the dry mixture, mixing until crumbly.
- Add 2 eggs and ½ cup of milk to the butter mixture. Mix until just combined.
- Fold in ½ cup of mango puree gently into the batter until well mixed.
- Scoop the batter into the prepared cupcake liners, filling each about 2/3 full.
- Using a teaspoon, place a dollop of strawberry jam on top of each cupcake. Use a toothpick or skewer to gently swirl the jam into the batter—don’t overmix!
- Place the pan in the preheated oven and bake for about 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cupcakes from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- If desired, whip up some cream cheese frosting or a simple buttercream and frost your cooled cupcakes.
