- 1 lb ground beef
- 1 package taco seasoning (or 3 tablespoons homemade taco seasoning)
- 1 4 ounce can diced green chiles
- 10 ounces mild red enchilada sauce
- 2 tablespoons sour cream
- 8 almond flour tortillas
- 2 cups Mexican blend cheese, shredded
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- In a large skillet over medium heat, brown 1 lb of ground beef for about 5-7 minutes, breaking it apart with a spatula. Cook until the meat is no longer pink.
- Once the beef is browned, add 1 package of taco seasoning (or 3 tablespoons of homemade taco seasoning) to the pan. Stir well and cook for an additional 2 minutes until fragrant.
- Mix in 1 can of diced green chiles, allowing the flavors to meld for 2 more minutes.
- Take the almond flour tortillas and spoon a generous portion of the beef mixture onto each one, about 1/4 cup of filling. Roll each tortilla tightly and place them seam side down in a greased baking dish.
- In a small bowl, whisk together 10 ounces of mild red enchilada sauce and 2 tablespoons of sour cream until smooth.
- Pour the enchilada sauce evenly over the rolled tortillas, covering them completely.
- Sprinkle 2 cups of shredded Mexican blend cheese over the top of the sauce.
- Cover the baking dish with foil and bake in the preheated oven for 15 minutes.
- After 15 minutes, remove the foil and bake for an additional 5 minutes until the cheese is bubbly and slightly golden.
- Once done, remove the enchiladas from the oven and allow them to cool for 5 minutes before serving.
