  • 1 lb ground beef
  • 1 package taco seasoning (or 3 tablespoons homemade taco seasoning)
  • 1 4 ounce can diced green chiles
  • 10 ounces mild red enchilada sauce
  • 2 tablespoons sour cream
  • 8 almond flour tortillas
  • 2 cups Mexican blend cheese, shredded

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In a large skillet over medium heat, brown 1 lb of ground beef for about 5-7 minutes, breaking it apart with a spatula. Cook until the meat is no longer pink.
  3. Once the beef is browned, add 1 package of taco seasoning (or 3 tablespoons of homemade taco seasoning) to the pan. Stir well and cook for an additional 2 minutes until fragrant.
  4. Mix in 1 can of diced green chiles, allowing the flavors to meld for 2 more minutes.
  5. Take the almond flour tortillas and spoon a generous portion of the beef mixture onto each one, about 1/4 cup of filling. Roll each tortilla tightly and place them seam side down in a greased baking dish.
  6. In a small bowl, whisk together 10 ounces of mild red enchilada sauce and 2 tablespoons of sour cream until smooth.
  7. Pour the enchilada sauce evenly over the rolled tortillas, covering them completely.
  8. Sprinkle 2 cups of shredded Mexican blend cheese over the top of the sauce.
  9. Cover the baking dish with foil and bake in the preheated oven for 15 minutes.
  10. After 15 minutes, remove the foil and bake for an additional 5 minutes until the cheese is bubbly and slightly golden.
  11. Once done, remove the enchiladas from the oven and allow them to cool for 5 minutes before serving.
