Ingredients

  • BBQ sauce (your favorite variety, preferably smoky)
  • Monterey Jack cheese (or cheddar cheese, or pepper jack for extra kick)
  • Flour tortillas (or corn tortillas for gluten-free)
  • Bell peppers (sliced)
  • Onions (sliced)
  • Corn (optional)
  • Jalapeños (optional)
  • Olive oil (or butter for grilling)

Instructions

  1. In a bowl, combine the shredded chicken with hot honey and BBQ sauce. Mix well until the chicken is evenly coated. Adjust the amount of hot honey based on your desired spiciness.
  2. In a skillet over medium heat, add a splash of olive oil. Sauté sliced bell peppers and onions until they are tender and slightly caramelized, about 5-7 minutes. Set aside.
  3. Take a tortilla and sprinkle half of it with cheese. Add a generous scoop of the BBQ chicken mixture, followed by the sautéed vegetables. Top with more cheese and fold the tortilla over.
  4. In the same skillet, add a little more oil or butter over medium heat. Place the folded quesadilla in the skillet and cook until golden brown and crispy, about 3-4 minutes per side. Press down gently with a spatula for even cooking.
  5. Continue with the remaining tortillas and filling, adding more oil as needed.
  6. Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and serve with extra BBQ sauce and hot honey for dipping.
