  • 1 lb lean ground beef
  • ½ cup finely chopped onion

  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • Dill pickle slices (optional)
  • 1 tbsp olive oil

Instructions

  1. In a small bowl, combine the mayonnaise, dill pickles, yellow mustard, white vinegar, paprika, garlic powder, and onion powder. Mix well and set aside — this will be your special sauce.
  2. In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until they are translucent and fragrant, stirring occasionally to avoid burning.
  3. Add the ground beef to the skillet with the onions. Cook for 6-8 minutes, breaking it up with a spoon, until browned and no longer pink, making sure to drain any excess fat.
  4. Season the cooked beef mixture with salt and pepper to taste. Stir everything together for about 1 minute to combine the flavors before removing it from heat.
  5. Warm the flour tortillas in a dry skillet over low heat for about 30 seconds on each side or until just pliable.
  6. To assemble, spread a generous amount of your special sauce on each tortilla, then layer on the beef mixture, shredded lettuce, and shredded cheddar cheese. If desired, add dill pickle slices for an extra crunch.
