Instructions

- In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and peppermint extract until well combined.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Gently fold in the chocolate chips and crushed peppermint candies.
- Using a cookie scoop or tablespoon, drop balls of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
