Instructions
- Preheat your oven to 350°F (175°C).
- If using fresh sweet potatoes, peel and chop them into chunks. Boil them in a pot of salted water for about 20 minutes, or until tender. If using canned sweet potatoes, simply drain and mash them in a bowl.
- Once tender, drain the fresh sweet potatoes and transfer them to a large bowl. Use a potato masher to mash them until smooth. Add in the maple syrup, melted butter, milk, eggs, brown sugar, vanilla extract, and a pinch of salt. Mix until everything is well combined and creamy.
- In a separate bowl, combine the chopped pecans, flour, and a bit of brown sugar (if using). Mix in melted butter until everything is well coated and crumbly.
- Pour the sweet potato mixture into a greased baking dish, smoothing it out evenly. Sprinkle the pecan topping over the sweet potato mixture, ensuring it covers the surface nicely.
- Place the casserole in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.
