Instructions

  1. Start by cutting your chuck roast into 2-inch pieces.
  2. Heat a skillet over medium-high heat with a little oil. Sear the beef pieces on all sides until browned, about 2-3 minutes per side.
  3. In your slow cooker, place the beef at the bottom. Add chopped potatoes, sliced carrots, and diced onions on top.
  4. Mince the garlic and sprinkle it over the vegetables and beef. Season everything generously with salt, pepper, and your choice of herbs.
  5. Carefully add the beef broth to the slow cooker, ensuring it covers the meat and veggies.
