- 2 cloves fresh garlic, minced (or garlic powder)
- 2 tablespoons butter

- Fresh thyme or rosemary (or other herbs like parsley or sage)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with butter or cooking spray to prevent sticking.
- Wash and peel the potatoes, then slice them thinly, about 1/8 inch thick.
- In a skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and cook until they are soft and translucent, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.
- In a saucepan, combine heavy cream, salt, pepper, and your choice of herbs. Heat over medium-low until warm, but do not boil. Stir in the sautéed onions and garlic.
- In the greased baking dish, layer half of the sliced potatoes, followed by half of the cream sauce. Sprinkle with half of your cheese. Repeat this process with the remaining potatoes, cream, and cheese.
- Cover the dish with aluminum foil and bake for 45 minutes. After 45 minutes, remove the foil and bake for an additional 30 minutes, or until the top is golden and the potatoes are tender.
- Once out of the oven, let your creamy scalloped potatoes rest for about 10 minutes before serving.
