  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together 1 cup of softened unsalted butter and ½ cup of granulated sugar until the mixture is light and fluffy.
  3. Mix in 1 teaspoon of almond extract and a pinch of salt. If you’re using vanilla extract instead, add 1 teaspoon of that.
  4. Gradually add 2 cups of all-purpose flour, mixing until just combined. Be careful not to over-mix, as this can make the cookies tough.
  5. Gently fold in 1 cup of dried cranberries and ½ cup of slivered almonds. The dough will be thick and slightly crumbly.
  6. Using your hands, form the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet, spacing them about 2 inches apart.
