Instructions
- In a small saucepan, whisk together the 2/3 cup water and 1/4 cup bread flour over medium heat. Cook for 4-5 minutes until the mixture thickens into a paste-like slurry. Remove from heat and transfer to a bowl, allowing it to cool slightly while you prepare the other ingredients.
- In a microwave-safe cup, gently warm 1/3 cup whole milk and 1/3 cup heavy cream until they feel warm to the touch but not hot. Stir in 2 teaspoons instant coffee granules until fully dissolved. Set this mixture aside.
- In a stand mixer bowl, combine 3 2/3 cups bread flour, 1/3 cup granulated sugar, 2 teaspoons instant yeast, and 1 teaspoon fine sea salt. Mix well. Add in the large egg (room temperature), the tangzhong you prepared, and the coffee milk/cream mixture. Knead on low speed with a dough hook for 2 minutes until the dough begins to form a rough ball.
- With the mixer still running on low, add 8 tablespoons of room temperature unsalted butter one tablespoon at a time, ensuring each addition is fully incorporated before adding the next. Continue kneading for an additional 12 minutes until the dough is smooth and elastic. You should be able to stretch it without tearing.
- In a large bowl, combine 12 tablespoons of room temperature unsalted butter, 3/4 cup brown sugar, 1 tablespoon ground cinnamon, and 1 tablespoon instant coffee. Mix until the filling is smooth and well-combined.
- Line a 9×13 baking pan with parchment paper. On a lightly floured surface, roll the dough into a rectangle measuring approximately 21×15 inches. This allows for even rolling and filling distribution.
- Spread the prepared brown sugar filling evenly across the entire surface of the dough, leaving a small border around the edges. This prevents the filling from spilling out while rolling.
- Using a pizza cutter, slice the dough into twelve strips, each measuring about 1 3/4 inches wide. Carefully roll each strip away from you to form the rolls. Place each roll into the prepared baking pan, cut side up.
- Cover the pan with plastic wrap and let the rolls rise in a warm place for 1-2 hours, or until they have doubled in size. You’ll know they’re ready when you can gently press a finger into the dough, and it springs back slowly.
- Meanwhile, preheat the oven to 325°F (162 °C). Once the rolls have risen, bake them for 30-40 minutes, or until the center roll's internal temperature reaches 185°F. They should be golden brown and puffed up.
- While the rolls are baking, prepare the frosting. Lightly warm 1 tablespoon of heavy cream and stir in 1 teaspoon instant coffee until dissolved. Allow this mixture to cool completely before using.
- In a stand mixer bowl, combine 4 ounces of cold cream cheese and 6 tablespoons of room temperature unsalted butter. Beat until smooth and lump-free, then gradually mix in 1 cup powdered sugar. Continue beating on low speed until fluffy, then add the cooled heavy cream/coffee mixture and 1 teaspoon vanilla bean paste or extract. Mix until well combined.
- Once the rolls are baked and cooled slightly, spread the coffee cream cheese frosting generously over the tops. Serve warm, and enjoy the heavenly coffee-infused goodness!
