Ingredients

  • bone-in, skin-on chicken thighs
  • fresh garlic cloves
  • low-sodium chicken broth
  • heavy cream
  • Yukon Gold or Russet potatoes
  • sharp cheddar cheese

Instructions

  1. Start by seasoning the chicken thighs with salt and pepper on both sides. In a large skillet, heat some olive oil over medium-high heat. Once hot, add the chicken, skin-side down. Sear for about 5-7 minutes until golden brown. Flip and cook for an additional 5 minutes. Remove the chicken and set it aside.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it!
  3. Pour in the chicken broth, scraping the bottom of the skillet to release any flavorful bits stuck to it. Add the heavy cream and stir well. Let it simmer for a couple of minutes to thicken slightly.
  4. Nestle the seared chicken back into the skillet with the gravy. Reduce the heat to low, cover, and let it simmer for about 25-30 minutes until the chicken is cooked through and tender.
  5. While the chicken is cooking, peel and chop the potatoes. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.
  6. Add butter, heavy cream, and shredded cheddar cheese to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
  7. Once the chicken is cooked, serve it over a generous scoop of cheesy mashed potatoes, drizzling the garlic gravy over the top. Garnish with fresh herbs if desired.
