Ingredients
- bone-in, skin-on chicken thighs

Instructions
- Start by seasoning the chicken thighs with salt and pepper on both sides. In a large skillet, heat some olive oil over medium-high heat. Once hot, add the chicken, skin-side down. Sear for about 5-7 minutes until golden brown. Flip and cook for an additional 5 minutes. Remove the chicken and set it aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it!
- Pour in the chicken broth, scraping the bottom of the skillet to release any flavorful bits stuck to it. Add the heavy cream and stir well. Let it simmer for a couple of minutes to thicken slightly.
- Nestle the seared chicken back into the skillet with the gravy. Reduce the heat to low, cover, and let it simmer for about 25-30 minutes until the chicken is cooked through and tender.
- While the chicken is cooking, peel and chop the potatoes. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.
- Add butter, heavy cream, and shredded cheddar cheese to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
- Once the chicken is cooked, serve it over a generous scoop of cheesy mashed potatoes, drizzling the garlic gravy over the top. Garnish with fresh herbs if desired.
