- 2/3 cup peanut butter
- 3/4 cup old fashioned (rolled oats)
- 2 tbsp maple syrup
- 1 tbsp peanut butter (per oat cup)
- 1/2 cup peanut butter
- 3 tbsp protein powder
- 1 cup chocolate chips (melted)
- flakey sea salt (optional)
Instructions
- In a medium mixing bowl, combine 2/3 cup of peanut butter with 2 tablespoons of maple syrup. Stir well until the mixture is smooth and fully blended, which should take about 1-2 minutes. Make sure there are no lumps for an even texture.
- Add 3/4 cup of rolled oats to the peanut butter mixture. Mix until the oats are completely coated and well incorporated, which should take another minute. The mixture should be sticky yet firm enough to hold its shape.
- Using a cookie scoop or a spoon, portion out about 2 tablespoons of the oat mixture into silicone molds. Press down firmly with the back of the spoon to ensure an even base. This should take about 5 minutes. Avoid overfilling the molds to prevent overflow during freezing.
- Next, dollop 1 tablespoon of peanut butter on top of each oat cup. Alternatively, mix 1/2 cup of peanut butter with 3 tablespoons of protein powder and spread this mixture on top for added nutrition. This step should take around 5 minutes.
- Freeze the oat cups for 20 minutes. You’ll know they are ready when they feel firm to the touch. If they are still soft, give them an additional 5 minutes.
- While the cups are freezing, melt 1 cup of chocolate chips in the microwave. Heat in 30-second increments, stirring well in between until smooth. This should take about 1-2 minutes total. Be careful not to overheat, as the chocolate can seize.
- Once the oat cups are firm, remove them from the freezer and drizzle the melted chocolate over each cup. Use a spoon to spread it evenly. Return the cups to the freezer for another 20 minutes, until the chocolate is set.
- After the final freeze, gently remove the cups from the silicone molds. If they stick, run warm water over the back of the molds for easier release. Sprinkle with flaky sea salt, if desired, and enjoy your delicious Peanut Butter Oat Cups!
