Ingredients

Scale
  • ½ cup unsalted butter
  • 8 ounces bittersweet or semi-sweet chocolate
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a medium saucepan over low heat, melt ½ cup of butter along with 8 ounces of bittersweet or semi-sweet chocolate, stirring until smooth. Remove from heat and let cool slightly.
  3. In a large bowl, whisk together 1 cup of granulated sugar and 2 large eggs until combined. Add in the cooled chocolate mixture, followed by 1 teaspoon of vanilla extract. Stir until smooth.
  4. Gently fold in ½ cup of all-purpose flour and ¼ cup of unsweetened cocoa powder until just combined. Be careful not to overmix. Pour the brownie batter into the prepared pan and spread it evenly.
  5. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool in the pan while you prepare the mousse.
  6. In a heatproof bowl, combine 8 ounces of chopped bittersweet chocolate and melt it over a pot of simmering water (double boiler method). Stir until smooth, then remove from heat and let cool slightly.
  7. In a separate bowl, whip 1 cup of heavy cream until soft peaks form. Gently fold the cooled melted chocolate into the whipped cream until fully incorporated.
  8. Once the brownie base has cooled, pour the mousse over the top, spreading it evenly. Refrigerate for at least 2 hours, or until the mousse is set.
  9. Once chilled, slice the brownies into squares. You can garnish with shaved chocolate, whipped cream, or fresh berries for an extra touch.
