  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • 1 tablespoon milk (or dairy-free alternative)
  • additional brown sugar and cinnamon for the swirl

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until it’s light and fluffy.
  3. In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
  4. Gradually add the dry mixture to the creamed butter and sugars, mixing until just combined. Be careful not to overmix!
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until evenly distributed throughout the batter.
  6. In a small bowl, combine more brown sugar and cinnamon for the swirl.
  7. Spread half of the batter into the prepared baking dish. Sprinkle the cinnamon mixture over this layer and then dollop the remaining batter on top, spreading it evenly.
  8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. While the bars cool, prepare the frosting by whisking together powdered sugar, softened butter, vanilla extract, and a splash of milk until smooth and creamy.
  10. Once the bars have cooled completely, spread the frosting generously on top. Cut into squares and enjoy!
