Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons cinnamon
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup powdered sugar
- 1 tablespoon milk (or dairy-free alternative)
- additional brown sugar and cinnamon for the swirl
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until it’s light and fluffy.
- In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
- Gradually add the dry mixture to the creamed butter and sugars, mixing until just combined. Be careful not to overmix!
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until evenly distributed throughout the batter.
- In a small bowl, combine more brown sugar and cinnamon for the swirl.
- Spread half of the batter into the prepared baking dish. Sprinkle the cinnamon mixture over this layer and then dollop the remaining batter on top, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- While the bars cool, prepare the frosting by whisking together powdered sugar, softened butter, vanilla extract, and a splash of milk until smooth and creamy.
- Once the bars have cooled completely, spread the frosting generously on top. Cut into squares and enjoy!

Keywords: Don't overbake the bars; they should be slightly firm to the touch but not dry. Let the bars cool completely before frosting to prevent the frosting from melting off.
