Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes. Add in 1 large egg and 2 teaspoons of vanilla extract, mixing until well incorporated.
- In a separate bowl, whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
- Cover the dough and chill in the refrigerator for at least 30 minutes.
- Use a cookie scoop or tablespoon to portion the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the edges are lightly golden but the centers still look soft.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
