Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes. Add in 1 large egg and 2 teaspoons of vanilla extract, mixing until well incorporated.
  3. In a separate bowl, whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
  5. Cover the dough and chill in the refrigerator for at least 30 minutes.
  6. Use a cookie scoop or tablespoon to portion the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the edges are lightly golden but the centers still look soft.
  8. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
