Instructions

  1. Begin by cracking the eggs into a small bowl. Season them with salt and pepper to taste, whisking until the mixture is well combined and slightly frothy.
  2. Heat a non-stick frying pan over medium-low heat. If you choose to use butter, add it to the pan now, allowing it to melt and coat the bottom.
  3. Pour the egg mixture into the heated pan. Cook the eggs gently, stirring occasionally until the edges begin to set and the center is still slightly runny, about 2-3 minutes.
  4. Once the eggs are nearly cooked, sprinkle half of the chopped beef bacon and half of the shredded cheese over the top. Place the flour tortilla on top of the egg mixture, pressing it down gently.
