  • 12 oz fettuccine (or your favorite pasta)

  • 1 tbsp olive oil

  • 1 lb Italian sausage (sweet or spicy, casings removed)

  • 4 cloves garlic, minced

  • 2 tbsp unsalted butter

  • 1 tbsp all-purpose flour

  • 1½ cups heavy cream

  • ¾ cup freshly grated parmesan cheese

  • Salt and freshly cracked black pepper, to taste

  • Optional: red pepper flakes, chopped parsley, extra parmesan for topping


Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook fettuccine according to package instructions until al dente. Reserve ½ cup pasta water, then drain and set aside.

  • Brown the Sausage: In a large skillet over medium heat, heat olive oil. Add sausage, breaking it up with a wooden spoon. Cook until browned and fully cooked through, about 6–8 minutes. Transfer to a plate and set aside.

  • Make the Sauce: In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant. Stir in flour and cook for another minute to create a roux.

  • Creamy Goodness: Slowly whisk in the heavy cream and bring to a simmer. Cook for 2–3 minutes until slightly thickened.

  • Cheese & Combine: Stir in parmesan cheese until melted and smooth. Return sausage to the skillet, season with salt and pepper.

  • Finish It Off: Add the drained fettuccine to the sauce and toss to coat. If needed, add a splash of reserved pasta water to loosen the sauce.

 

  • Serve: Garnish with fresh parsley, red pepper flakes, and extra parmesan. Serve hot!

Notes

  • Want it lighter? Use half-and-half instead of cream.

  • No fettuccine? Penne, rigatoni, or spaghetti work beautifully too.

  • For extra spice, use hot Italian sausage and red chili flakes.
