Instructions
- Roughly chop your fresh parsley, chives, dill, and tarragon. Peel and roughly chop your shallot and garlic clove.
- In a blender or food processor, combine the chopped herbs, shallot, garlic, anchovy paste (or capers), mayonnaise, Greek yogurt, fresh lemon juice, and a good pinch of salt and black pepper. Blend on high until completely smooth and vibrant green.
- Transfer the dressing to an airtight container and refrigerate for at least 30 minutes.
- On a large cutting board, finely chop your romaine lettuce, English cucumber, and bell pepper into small pieces.
- In a large mixing bowl, add your finely chopped vegetables (and protein, if using). Pour about two-thirds of the chilled Green Goddess dressing over the chopped ingredients. Toss gently but thoroughly until everything is evenly coated.
