Ingredients
- Russet Potatoes
- Cooked Shredded Chicken
- Cream Cheese
- Ranch Seasoning Mix

Instructions
- Preheat your oven to 400°F (200°C).
- Thoroughly scrub your russet potatoes under cold water to remove any dirt. Pat them completely dry.
- Using a fork, pierce each potato several times all over.
- Rub each potato with a little olive oil, then sprinkle generously with salt.
- Place the prepared potatoes directly on the oven rack. Bake for 60-90 minutes, or until they are very tender.
- Once baked, carefully remove the potatoes from the oven and set them aside to cool slightly.
- While the potatoes are baking, prepare your crack chicken filling. In a large mixing bowl, combine the cooked and shredded chicken, softened cream cheese, and the packet of ranch seasoning mix.
- Add about half of your shredded cheddar cheese and half of your cooked and crumbled beef bacon. Mix everything together thoroughly.
- Once the potatoes are cool enough to handle, carefully slice each potato lengthwise down the middle.
- Gently scoop out most of the fluffy potato flesh from each half, leaving a thin border of potato attached to the skin.
- Mash the scooped potato flesh and add it into your crack chicken filling bowl. Mix everything together until well combined.
- Spoon the crack chicken and potato mixture back into the empty potato skins, mounding it generously.
- Place the stuffed potato halves back onto a baking sheet.
- Sprinkle the remaining shredded cheddar cheese evenly over the top of each stuffed potato.
- Return the baking sheet to the preheated oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
