- 2 large naan breads
- 2 boneless, skinless chicken breasts
- 1 cup plain Greek yogurt
- 1 medium cucumber, grated
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- Fresh parsley or dill, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Pound the chicken breasts to an even thickness of about 1 inch.
- In a small bowl, mix olive oil, lemon juice, salt, and pepper. Brush this mixture over both sides of the chicken.
- Heat a skillet over medium-high heat and cook the chicken for 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.
- In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, salt, and pepper. Mix well.
- Optionally, strain the grated cucumber for a thicker tzatziki.
- Taste and adjust seasoning if necessary. Refrigerate for at least 15 minutes.
- Place naan breads on a baking sheet.
- Spread tzatziki sauce over each naan, leaving a small border.
- Distribute sliced chicken evenly over the tzatziki.
- Sprinkle halved cherry tomatoes on top.
- Top with shredded mozzarella cheese.
- Bake in the preheated oven for 10-12 minutes until cheese is melted and edges are golden brown.
- Remove from the oven and let cool for a minute.
- Drizzle extra tzatziki sauce over the top.
- Garnish with fresh parsley or dill.
- Slice into quarters or halves and serve immediately.
