  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled breakfast sausage (or bacon, if preferred)
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onion
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1/4 cup chopped green onions (for garnish)
  • Hot sauce (optional, for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Spread the frozen tater tots evenly on a large baking sheet in a single layer.
  3. Bake the tater tots for about 25-30 minutes, or until golden brown and crispy, shaking or flipping halfway through.
  4. While the tater tots are baking, heat a large skillet over medium heat and add the crumbled breakfast sausage (or bacon).
  5. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.
  6. Add the diced bell peppers and onions to the skillet, sautéing for an additional 3-4 minutes until tender. Season with salt and pepper.
  7. In a medium bowl, crack the 6 large eggs and add the 1/4 cup of milk. Whisk until well combined and season with salt and pepper.
  8. In the same skillet, reduce the heat to low. Drain excess grease if necessary, but leave some for flavor.
  9. Pour the egg mixture into the skillet, allowing it to sit for a moment to start setting around the edges.
  10. Gently stir the eggs, folding them over the sausage and vegetables, and cook for about 3-5 minutes until fully cooked but still soft.
  11. Once the tater tots are done, let them cool for a minute.
  12. In a large bowl or individual serving bowls, layer the crispy tater tots at the bottom.
  13. Spoon the egg, sausage, and vegetable mixture over the tater tots.
  14. Sprinkle shredded cheddar cheese on top. For extra melty cheese, return the bowls to the oven for a few minutes.
  15. Remove the bowls from the oven and garnish with chopped green onions.
  16. Drizzle with hot sauce if desired.
