Ingredients
- cornmeal
- all-purpose flour
- granulated sugar
- baking powder
- salt
- milk
- eggs
- butter
- corn kernels

Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the dry ingredients: cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the wet ingredients: milk, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the corn kernels and optional cheddar cheese.
- Grease a mini muffin tin and fill each cup about 2/3 full with the batter.
- Bake for 15 minutes or until golden brown and a toothpick inserted comes out clean.
- Let cool for a few minutes before removing from the tin.
