Ingredients
- Bone-in, skin-on chicken thighs
- Apple cider
- Maple syrup
- Dijon mustard
- Fresh thyme
- Red cabbage
- Carrots
- Apple
- Apple cider vinegar
- Olive oil
- Salt
- Pepper
Instructions
- Start by patting the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
- In a large skillet over medium-high heat, add a tablespoon of olive oil. Once hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is golden brown and crispy. Flip and cook for another 3-4 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add a splash of apple cider to deglaze the pan, scraping up any browned bits. Add the remaining apple cider, maple syrup, Dijon mustard, and thyme. Stir to combine.
- Return the chicken to the skillet, skin-side up. Bring the sauce to a simmer, then cover and reduce the heat to low. Let it cook for about 25-30 minutes until the chicken is cooked through and tender, basting occasionally with the sauce.
- While the chicken is cooking, prepare your slaw. In a large bowl, combine shredded red cabbage, carrots, and thinly sliced apple. In a small bowl, whisk together apple cider vinegar, olive oil, salt, and pepper. Pour the dressing over the slaw and toss to combine.
- Once the chicken is done, remove it from the skillet and let it rest for a few minutes. Slice the chicken and serve it over a bed of the crisp autumn slaw, drizzled with the sticky sauce from the skillet.
