Ingredients

  • 450g short pasta (rotini, orecchiette, or cavatappi)
  • 1 tbsp olive oil
  • 1 tsp salt (for pasta water)
  • 1/2 cup chopped red onion
  • 1 cup halved cherry tomatoes
  • 1 cup diced yellow bell pepper
  • 1 cup diced orange bell pepper
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 150g fresh mini mozzarella balls, drained
  • 1 (3.8-oz) can pitted black olives, sliced into rings
  • 1 (2.25-oz) can small pimiento-stuffed green olives, halved
  • Optional: Red food coloring or beet juice
  • 1 cup mayonnaise
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/4 cup apple cider vinegar
  • 2 tbsp Dijon mustard
  • 1 tbsp sugar or maple syrup
  • 2 cloves minced garlic
  • 1 tsp dried Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt, to taste
  • Optional: Dash of hot sauce

Instructions

  1. Step 1
    Drain mini mozzarella balls. Slice black olives into rings and halve pimiento-stuffed green olives. Assemble eyeballs: place a black olive ring on each mozzarella ball, then a halved green olive (pimiento up) in the center. Optionally, use red food coloring or beet juice for ‘bloodshot’ veins. Refrigerate.
  2. Step 2
    Bring a large pot of salted water to a vigorous boil. Add pasta and cook until al dente (30-60 seconds less than package directions). Drain immediately, do not rinse. Transfer to a large bowl, drizzle with 1 tbsp olive oil, toss, and let cool completely.
  3. Step 3
    Finely chop red onion (soak in ice water to mellow, if desired). Halve cherry tomatoes. Dice yellow and orange bell peppers to similar sizes. Finely chop fresh parsley and dill. Set aside.
  4. Step 4
    In a medium bowl, whisk mayonnaise and Greek yogurt/sour cream until smooth. Add apple cider vinegar, Dijon mustard, sugar/maple syrup, minced garlic, Italian seasoning, smoked paprika, black pepper, and salt. Whisk until smooth. Taste and adjust seasonings. Optionally, add hot sauce or red food coloring. Cover and refrigerate for at least 30 minutes.
  5. Step 5
    In a large bowl, combine cooled pasta, chopped vegetables, and chilled dressing. Fold gently until evenly coated. Gently fold in about two-thirds of the prepared mozzarella eyeballs. Transfer to a serving bowl. Artfully arrange remaining eyeballs on top. Cover and refrigerate for at least 2-3 hours (overnight for best flavor).
  6. Step 6
    Before serving, stir gently. If dry, stir in 1-2 tbsp milk/broth/mayo. Garnish with extra parsley/dill. Serve cold. Store leftovers in an airtight container in the refrigerator for 3-4 days. (Make Ahead Tip: Prepare up to 24 hours in advance; add final eyeballs just before serving for best presentation. Serve in a dark bowl for dramatic effect).
