Ingredients
Scale
- Fresh ramen noodles or instant ramen
- Thinly sliced ribeye or sirloin beef (or flank steak for a leaner option, tofu or tempeh for vegetarian)
- 2 tablespoons gochujang
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1 cup heavy cream (or half-and-half or coconut cream for a lighter or dairy-free option)
- Bok choy and mushrooms (or any vegetables like spinach or bell peppers)
- Sliced green onions (or chives or shallots)
- Sesame oil for drizzling
Instructions
- Marinate the Beef: In a bowl, mix 2 tablespoons of gochujang, 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, and a teaspoon of sugar. Add the thinly sliced beef and let it marinate for at least 30 minutes.
- Cook the Ramen: While the beef is marinating, bring a pot of water to a boil. Add the ramen noodles and cook according to the package instructions. Once cooked, drain and set aside.
- Grill the Beef: Heat a grill pan over medium-high heat. Grill the marinated beef slices for about 2-3 minutes on each side until cooked through and slightly charred. Remove from the pan and let it rest.
- Prepare the Creamy Sauce: In the same pan, lower the heat to medium and add 1 cup of heavy cream, a tablespoon of gochujang, and a splash of soy sauce. Stir until the sauce is well combined and slightly thickened, about 5 minutes.
- Add Vegetables: Add your choice of vegetables (bok choy and mushrooms work well) to the creamy sauce. Cook for another 3-4 minutes until they are tender.
- Combine: Gently fold the cooked ramen into the sauce, ensuring the noodles are well coated. Add the grilled beef on top and mix gently.
- Garnish and Serve: Serve your spicy ramen in bowls, garnished with sliced green onions and a drizzle of sesame oil for extra flavor.
