Ingredients
- Large flour tortillas
- Thinly sliced roast beef
- Swiss cheese
- Beef broth
- Horseradish sauce
- Sautéed onions
- Sautéed bell peppers
- Butter or oil (for toasting)
Instructions
- In a skillet over medium heat, sauté thinly sliced onions and bell peppers until they're soft and caramelized, about 5-7 minutes. Set them aside.
- Lay a tortilla flat on a clean surface. Spread a thin layer of horseradish sauce over the tortilla, followed by a layer of roast beef, sautéed onions, and bell peppers. Top it off with a slice of Swiss cheese.
- Starting from one end, tightly roll the tortilla around the filling, making sure to tuck in the sides as you go to keep everything inside. Repeat this process for the remaining tortillas.
- In the same skillet, add a little butter or oil over medium heat. Place the rollups seam-side down and toast until golden brown, about 2-3 minutes per side.
- In a small saucepan, heat the beef broth over medium heat until just simmering. If desired, you can add a splash of Worcestershire sauce for extra flavor.
- Once toasted, slice each rollup into bite-sized pieces. Arrange them on a platter with a small bowl of warm dipping broth in the center.
