Ingredients
Scale
- 8 slices of bread (white or whole wheat)
- 4 breakfast sausages (links or patties, cooked and crumbled)
- 4 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 tablespoon sugar (optional)
- Butter or oil for cooking
- Maple syrup for serving
- Powdered sugar for dusting (optional)
Instructions
- Flatten the Bread: Use a rolling pin to flatten each slice of bread to about 1/4 inch thick.
- Prepare the Sausage Filling: Cook the sausages until golden brown, then crumble them into small pieces.
- Assemble the Filling: Place a spoonful of crumbled sausage at one end of a flattened slice of bread. Optionally, add a sprinkle of cheese.
- Roll It Up: Starting from the end with the filling, roll the bread tightly, tucking in the sides as you go. Secure with a toothpick if necessary.
- Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk until well combined.
- Add Milk and Flavorings: Pour in the milk, vanilla extract, and ground cinnamon. Add sugar if desired, and whisk until smooth.
- Heat the Pan: Place a skillet or griddle over medium heat and add a tablespoon of butter or oil.
- Dip the Roll-Ups: Dip each roll-up into the egg mixture, ensuring even coating. Let excess drip off.
- Cook Until Golden: Cook roll-ups for 2-3 minutes on each side until golden brown and crispy. Adjust heat as needed.
- Remove and Keep Warm: Transfer cooked roll-ups to a plate and keep warm in a low oven (around 200°F) while finishing the rest.
- Serve the roll-ups warm with maple syrup and a dusting of powdered sugar if desired.
Notes
