  • 2 pints of cherry tomatoes (or grape tomatoes)
  • 3 tablespoons of extra virgin olive oil
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of freshly cracked black pepper
  • 1 teaspoon of balsamic vinegar (optional)
  • 1 clove of garlic, minced
  • 1 teaspoon of fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 ball of fresh burrata cheese (about 8 ounces)
  • Fresh basil leaves for garnish
  • Crusty bread for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the cherry tomatoes under cold water and pat them dry with a clean kitchen towel.
  3. In a large mixing bowl, combine the tomatoes with olive oil, sea salt, black pepper, minced garlic, and thyme. Toss gently until well coated.
  4. Spread the seasoned tomatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast the tomatoes in the preheated oven for about 20-25 minutes until blistered and slightly caramelized.
  6. If desired, drizzle balsamic vinegar over the tomatoes during the last 5 minutes of roasting.
  7. While the tomatoes roast, let the burrata cheese sit at room temperature for 15-20 minutes to soften.
  8. Once the tomatoes are done, remove them from the oven and let them cool slightly.
  9. To serve, place the roasted tomatoes in a shallow serving dish.
  10. Tear the burrata into pieces and place it in the center of the roasted tomatoes.
  11. Drizzle a little extra virgin olive oil over the top.
  12. Garnish with fresh basil leaves.
  13. Serve warm or at room temperature, optionally with slices of crusty bread for dipping.
