This Roasted Tomatoes with Burrata recipe combines sweet, blistered cherry tomatoes with creamy burrata cheese, enhanced by olive oil and fresh basil. It’s a versatile dish ideal for appetizers, sides, or light mains, offering a delightful burst of flavor in every bite.

- 2 pints of cherry tomatoes (or grape tomatoes)
- 3 tablespoons of extra virgin olive oil
- 1 teaspoon of sea salt
- 1/2 teaspoon of freshly cracked black pepper
- 1 teaspoon of balsamic vinegar (optional)
- 1 clove of garlic, minced
- 1 teaspoon of fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 ball of fresh burrata cheese (about 8 ounces)
- Fresh basil leaves for garnish
- Crusty bread for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the cherry tomatoes under cold water and pat them dry with a clean kitchen towel.
- In a large mixing bowl, combine the tomatoes with olive oil, sea salt, black pepper, minced garlic, and thyme. Toss gently until well coated.
- Spread the seasoned tomatoes in a single layer on a baking sheet lined with parchment paper.
- Roast the tomatoes in the preheated oven for about 20-25 minutes until blistered and slightly caramelized.
- If desired, drizzle balsamic vinegar over the tomatoes during the last 5 minutes of roasting.
- While the tomatoes roast, let the burrata cheese sit at room temperature for 15-20 minutes to soften.
- Once the tomatoes are done, remove them from the oven and let them cool slightly.
- To serve, place the roasted tomatoes in a shallow serving dish.
- Tear the burrata into pieces and place it in the center of the roasted tomatoes.
- Drizzle a little extra virgin olive oil over the top.
- Garnish with fresh basil leaves.
- Serve warm or at room temperature, optionally with slices of crusty bread for dipping.

- Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.
