- 2 large eggs

- 1 teaspoon smoked paprika

- 1 cup heavy cream

Instructions
- Preheat your oven to 400°F (200°C).
- Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1 inch.
- In a small bowl, mix salt, pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over the chicken breasts.
- In three shallow dishes, place all-purpose flour in the first dish, whisked eggs and Dijon mustard in the second dish, and pretzel crumbs in the third dish.
- Dip each chicken breast in flour, then in the egg mixture, and finally coat with pretzel crumbs, pressing gently to adhere.
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Sear the breaded chicken breasts for 3-4 minutes on each side until golden brown. You may need to do this in batches.
- Move the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
- In a medium saucepan over medium heat, warm the heavy cream, stirring occasionally.
- Gradually add shredded cheddar cheese to the warm cream, stirring until melted and smooth.
- Stir in the remaining Dijon mustard and season with salt and pepper. Optionally, add cayenne pepper for heat.
- Simmer the sauce for a few more minutes if you prefer a thicker consistency, adding milk if necessary.
- Remove the chicken from the oven and let it rest for a few minutes.
- Drizzle the mustard cheddar sauce over the chicken or serve it on the side.
- Sprinkle with freshly chopped parsley before serving.
