  • 2 cups pretzel crumbs (crushed pretzels)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1 inch.
  3. In a small bowl, mix salt, pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over the chicken breasts.
  4. In three shallow dishes, place all-purpose flour in the first dish, whisked eggs and Dijon mustard in the second dish, and pretzel crumbs in the third dish.
  5. Dip each chicken breast in flour, then in the egg mixture, and finally coat with pretzel crumbs, pressing gently to adhere.
  6. In a large oven-safe skillet, heat olive oil over medium-high heat.
  7. Sear the breaded chicken breasts for 3-4 minutes on each side until golden brown. You may need to do this in batches.
  8. Move the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  9. In a medium saucepan over medium heat, warm the heavy cream, stirring occasionally.
  10. Gradually add shredded cheddar cheese to the warm cream, stirring until melted and smooth.
  11. Stir in the remaining Dijon mustard and season with salt and pepper. Optionally, add cayenne pepper for heat.
  12. Simmer the sauce for a few more minutes if you prefer a thicker consistency, adding milk if necessary.
  13. Remove the chicken from the oven and let it rest for a few minutes.
  14. Drizzle the mustard cheddar sauce over the chicken or serve it on the side.
  15. Sprinkle with freshly chopped parsley before serving.
