  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 4 cloves garlic (minced)
  • 1 tablespoon smoked paprika
  • 1 tablespoon dried oregano
  • 1 tablespoon fresh parsley (chopped)
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Juice of 1 lemon

Instructions

  1. In a medium-sized mixing bowl, combine the olive oil and white wine vinegar.
  2. Add the minced garlic to the bowl.
  3. Sprinkle in the smoked paprika.
  4. Add the dried oregano.
  5. Chop up some fresh parsley and toss it in.
  6. Add the ground cumin, salt, black pepper, and red pepper flakes (if using).
  7. Squeeze the juice of one lemon into the mixture.
  8. Whisk all the ingredients together until well combined.
  9. Pat the chicken breasts dry with paper towels.
  10. Place the chicken breasts in a large resealable plastic bag or a shallow dish.
  11. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish.
  12. Refrigerate the chicken for at least 2 hours, preferably overnight.
  13. Preheat your grill to medium-high heat.
  14. Remove the chicken from the refrigerator and let it sit at room temperature for 15-20 minutes.
  15. Lightly oil the grill grates to prevent sticking.
  16. Place the marinated chicken breasts on the grill, leaving space between each piece.
  17. Grill for about 6-7 minutes on one side without moving.
  18. Flip the chicken and grill for another 6-7 minutes on the other side until the internal temperature reaches 165°F (75°C).
  19. Optionally, brush some leftover marinade on the chicken during the last few minutes of grilling for extra flavor.
