Ingredients
- Salmon fillets

Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a bowl, combine 1/2 cup of freshly grated Parmesan cheese, 1/4 cup of breadcrumbs, 2 tablespoons of Dijon mustard, 1/4 cup of mayonnaise (or Greek yogurt), and 2 tablespoons of chopped fresh herbs. Mix until well combined.
- Place the salmon fillets on the prepared baking sheet and season with salt and pepper to taste.
- Spread the Parmesan-Dijon mixture generously over the top of each salmon fillet.
