- 1 pound breakfast sausage (mild or spicy, depending on your preference)
- 8 large eggs
- 2 cups milk
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup shredded cheddar cheese (optional)
- Maple syrup, for serving
Instructions
- In a large skillet over medium heat, add the breakfast sausage. Use a wooden spoon to break it up into smaller pieces as it cooks. Cook for about 8-10 minutes, or until browned and cooked through. Drain excess grease and set aside.
- In a large mixing bowl, whisk together 8 large eggs and 2 cups of milk until combined. In a separate bowl, mix 2 cups of flour, 1 tablespoon of baking powder, 1 teaspoon of salt, and 1/4 cup of sugar. Gradually add the dry ingredients to the wet ingredients, whisking until smooth. Stir in 1 teaspoon of vanilla extract and fold in 1/2 cup of shredded cheddar cheese if desired.
- Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish. Spread the cooked sausage evenly across the bottom of the dish. Pour the pancake batter over the sausage, covering it completely. Sprinkle any reserved cheddar cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean. Let cool for 5-10 minutes before cutting.
- Cut into squares or rectangles and serve warm, drizzled with maple syrup. Add fresh fruit or whipped cream on the side if desired.
