- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces semi-sweet chocolate, chopped
- 2 tablespoons unsalted butter
- 1/4 cup milk
- 1/4 teaspoon salt
- Mint leaves (for garnish, optional)
Instructions
- Chop the semi-sweet chocolate into small pieces for even melting.
- In a medium saucepan, combine the chopped chocolate, unsalted butter, and milk. Place over low heat.
- Stir continuously until the chocolate and butter are melted and smooth. Avoid burning by keeping the heat low.
- Remove from heat and let cool for about 10 minutes.
- In a large mixing bowl, pour in the heavy whipping cream.
- Add the powdered sugar and vanilla extract.
- Using an electric mixer, beat on medium-high speed until soft peaks form (about 3-5 minutes). Avoid over-whipping.
- Once the chocolate has cooled, fold a small amount of whipped cream into the chocolate mixture to lighten it.
- Carefully fold in the remaining whipped cream using a spatula, maintaining the airiness.
- Add a pinch of salt and stir gently to incorporate.
- In a small bowl, mash the fresh raspberries with a fork until mostly pureed but still chunky.
- For a smoother layer, blend the raspberries and strain through a fine mesh sieve (optional).
- Set aside the raspberry puree. Sweeten with powdered sugar if desired.
- In serving glasses, add a layer of raspberry puree (1-2 tablespoons).
- Spoon a generous layer of chocolate mousse over the raspberry layer, filling glasses halfway.
- Repeat layers: add more raspberry puree followed by chocolate mousse, finishing with a layer of chocolate mousse on top.
- Smooth the top with a spatula or spoon for a nice finish.
Notes
- For a more intense raspberry flavor, consider adding a splash of raspberry liqueur to the puree.
- This mousse can be made a day in advance and stored in the refrigerator until ready to serve.
