- 1 can (14.5 oz) diced tomatoes with green chilies
- 2 tablespoons taco seasoning (store-bought or homemade)
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro, chopped (for garnish)
- Avocado slices (optional, for serving)
- Chips or tortillas (optional, for serving)
Instructions
- Gather all your ingredients. Dice the onion and bell pepper, and mince the garlic. Drain and rinse the black beans and corn. Set aside the diced tomatoes with green chilies.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sauté for 3-4 minutes until softened. Add minced garlic and cook for 1 minute.
- Push the vegetables to the side and add the ground beef. Cook until browned, about 5-7 minutes, stirring occasionally. Drain excess fat.
- Sprinkle taco seasoning and cumin over the beef mixture. Stir to combine. Add diced tomatoes, black beans, and corn. Mix well and season with salt and pepper.
- Reduce heat to low and let the mixture simmer for 10 minutes, stirring occasionally. Adjust consistency with water or broth if needed.
- Sprinkle shredded cheese over the mixture, cover, and cook for an additional 2-3 minutes until cheese is melted.
- Serve the beef mixture in bowls or family-style from the skillet. Garnish with cilantro and avocado slices if desired. Serve with tortilla chips or warm tortillas.
