  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, chopped (for garnish)
  • Avocado slices (optional, for serving)
  • Chips or tortillas (optional, for serving)

Instructions

  1. Gather all your ingredients. Dice the onion and bell pepper, and mince the garlic. Drain and rinse the black beans and corn. Set aside the diced tomatoes with green chilies.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sauté for 3-4 minutes until softened. Add minced garlic and cook for 1 minute.
  3. Push the vegetables to the side and add the ground beef. Cook until browned, about 5-7 minutes, stirring occasionally. Drain excess fat.
  4. Sprinkle taco seasoning and cumin over the beef mixture. Stir to combine. Add diced tomatoes, black beans, and corn. Mix well and season with salt and pepper.
  5. Reduce heat to low and let the mixture simmer for 10 minutes, stirring occasionally. Adjust consistency with water or broth if needed.
  6. Sprinkle shredded cheese over the mixture, cover, and cook for an additional 2-3 minutes until cheese is melted.
  7. Serve the beef mixture in bowls or family-style from the skillet. Garnish with cilantro and avocado slices if desired. Serve with tortilla chips or warm tortillas.
