Instructions
- Wash the cucumbers thoroughly under cold water using a vegetable brush to remove any dirt or pesticides.
- Slice the cucumbers thinly, aiming for about 1/8 inch thick slices for the best texture.
- Dice the tomatoes into bite-sized pieces, removing the seeds to reduce excess moisture.
- Peel and thinly slice the red onion. If desired, soak the slices in cold water for 10 minutes to mellow their flavor.
- In a medium mixing bowl, combine the white vinegar and olive oil, whisking until well blended.
- Add the sugar to the vinegar and oil mixture, stirring until completely dissolved.
- Sprinkle in the salt, black pepper, dried oregano, and garlic powder, whisking until well incorporated.
- In a large mixing bowl, combine the sliced cucumbers, diced tomatoes, and sliced onions.
- Pour the marinade over the vegetable mixture, gently tossing to coat all the vegetables evenly.
- Cover the bowl with plastic wrap or a lid and let it sit at room temperature for about 30 minutes, or refrigerate for a couple of hours or overnight for more intense flavor.
- After marinating, give the salad another gentle toss and taste to adjust seasoning if necessary.
- Transfer the salad to a serving dish and garnish with freshly chopped parsley or dill if desired.
