Instructions

  1. Wash the cucumbers thoroughly under cold water using a vegetable brush to remove any dirt or pesticides.
  2. Slice the cucumbers thinly, aiming for about 1/8 inch thick slices for the best texture.
  3. Dice the tomatoes into bite-sized pieces, removing the seeds to reduce excess moisture.
  4. Peel and thinly slice the red onion. If desired, soak the slices in cold water for 10 minutes to mellow their flavor.
  5. In a medium mixing bowl, combine the white vinegar and olive oil, whisking until well blended.
  6. Add the sugar to the vinegar and oil mixture, stirring until completely dissolved.
  7. Sprinkle in the salt, black pepper, dried oregano, and garlic powder, whisking until well incorporated.
  8. In a large mixing bowl, combine the sliced cucumbers, diced tomatoes, and sliced onions.
  9. Pour the marinade over the vegetable mixture, gently tossing to coat all the vegetables evenly.
  10. Cover the bowl with plastic wrap or a lid and let it sit at room temperature for about 30 minutes, or refrigerate for a couple of hours or overnight for more intense flavor.
  11. After marinating, give the salad another gentle toss and taste to adjust seasoning if necessary.
  12. Transfer the salad to a serving dish and garnish with freshly chopped parsley or dill if desired.
