  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut (unsweetened)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium-sized mixing bowl, combine the rolled oats and chia seeds.
  2. Pour in the coconut milk and stir well to ensure the oats and chia seeds are evenly coated.
  3. Add honey or maple syrup if desired, adjusting to taste.
  4. Mix in the vanilla extract and salt until well combined.
  5. Dice the ripe mango into small, bite-sized pieces.
  6. Gently fold half of the diced mango into the oat mixture.
  7. Reserve the other half of the mango for topping in the morning.
  8. Transfer the oat mixture into a jar or an airtight container.
  9. Seal tightly and place in the refrigerator to soak overnight or for at least 4-6 hours.
  10. Remove the jar from the refrigerator. If the mixture is too thick, stir in a splash of coconut milk.
  11. Top with the reserved diced mango.
  12. Sprinkle shredded coconut on top.
