  • Total Time: 45 minutes
  • Yield: 4 servings

Description

This Chicken, Beef Bacon, And Cheese Low Carb Casserole is a celebration of flavors, combining tender chicken, crispy beef bacon, and gooey cheese for a hearty meal. Perfect for anyone watching their carb intake, this dish delivers all the richness of a classic casserole without the guilt.

Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Beef bacon
  • Sharp cheddar cheese
  • Mozzarella cheese
  • Broccoli or spinach
  • Bell peppers or zucchini
  • Heavy cream
  • Olive oil
  • Garlic powder
  • Onion powder
  • Italian herbs
  • Cayenne pepper (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add a bit of olive oil and cook the chicken until it’s no longer pink in the center, about 5-7 minutes per side. Once cooked, remove from the skillet and let it cool slightly before cutting it into bite-sized pieces.
  3. In the same skillet, add the beef bacon and cook until crispy. Drain any excess fat and set aside.
  4. In a large mixing bowl, combine the cooked chicken, crispy beef bacon, chopped vegetables, and a generous amount of shredded cheese. Pour in the heavy cream and mix until everything is well combined.
  5. Grease a 9×13 inch casserole dish and pour the mixture into it. Spread it out evenly and top with any remaining cheese.
  6. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Once out of the oven, let the casserole cool for about 5-10 minutes before serving.
