Ingredients
- Boneless, skinless chicken breasts or thighs
- Beef bacon
- Sharp cheddar cheese
- Mozzarella cheese
- Broccoli or spinach
- Bell peppers or zucchini
- Heavy cream
- Olive oil
- Garlic powder
- Onion powder
- Italian herbs
- Cayenne pepper (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add a bit of olive oil and cook the chicken until it’s no longer pink in the center, about 5-7 minutes per side. Once cooked, remove from the skillet and let it cool slightly before cutting it into bite-sized pieces.
- In the same skillet, add the beef bacon and cook until crispy. Drain any excess fat and set aside.
- In a large mixing bowl, combine the cooked chicken, crispy beef bacon, chopped vegetables, and a generous amount of shredded cheese. Pour in the heavy cream and mix until everything is well combined.
- Grease a 9×13 inch casserole dish and pour the mixture into it. Spread it out evenly and top with any remaining cheese.
- Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
- Once out of the oven, let the casserole cool for about 5-10 minutes before serving.
