- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- 1 cup fresh raspberries
- Additional powdered sugar for dusting
Instructions
- Set and slightly golden on top. The edges should be firm, and the center should have a slight jiggle.
- Once baked, remove from the oven and let the bars cool completely in the baking dish on a wire rack.
- Once cooled, lift the bars out using the parchment paper overhang and cut into squares.
- Before serving, dust the bars with powdered sugar and garnish with fresh raspberries and lemon slices if desired.

- For a more intense lemon flavor, you can increase the lemon zest to 2 tablespoons.
