Ingredients
- Large bell peppers (any color, preferably red or yellow)
- Ground chicken
- Ground beef (80/20 or 85/15)
- Cooked and crumbled bacon
- Ranch seasoning (homemade or store-bought)
- Cheddar cheese
- Cream cheese
- Chopped onions
- Minced garlic
- Olive oil
- Chopped spinach (optional)
- Zucchini (optional)
Instructions
- Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for baking.
- Slice the tops off the bell peppers and remove the seeds and membranes. Lightly coat the outside of the peppers with olive oil and place them in a baking dish, cut side up.
- In a skillet over medium heat, cook the bacon until crispy. Remove it from the skillet and let it cool on paper towels, then crumble it into small pieces.
- In the same skillet, add a little more olive oil if needed. Sauté chopped onions and minced garlic until soft and fragrant, about 2-3 minutes.
- In a large bowl, combine the ground chicken, ground beef, sautéed onions and garlic, crumbled bacon, ranch seasoning, cream cheese, and shredded cheese. Mix everything until well combined.
- Generously fill each prepared pepper with the filling mixture, pressing it down slightly to pack it in.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the filling is cooked through.
- Once baked, let the stuffed peppers cool for a few minutes. You can garnish with additional shredded cheese, chopped green onions, or fresh herbs before serving.
