Description

These Keto Beef Bacon Ranch Stuffed Peppers are a delicious and satisfying meal that fits perfectly into your keto lifestyle. Packed with flavor and protein, they are easy to prepare and perfect for meal prep.

Ingredients

  • Large bell peppers (any color, preferably red or yellow)
  • Ground chicken
  • Ground beef (80/20 or 85/15)
  • Cooked and crumbled bacon
  • Ranch seasoning (homemade or store-bought)
  • Cheddar cheese
  • Cream cheese
  • Chopped onions
  • Minced garlic
  • Olive oil
  • Chopped spinach (optional)
  • Zucchini (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for baking.
  2. Slice the tops off the bell peppers and remove the seeds and membranes. Lightly coat the outside of the peppers with olive oil and place them in a baking dish, cut side up.
  3. In a skillet over medium heat, cook the bacon until crispy. Remove it from the skillet and let it cool on paper towels, then crumble it into small pieces.
  4. In the same skillet, add a little more olive oil if needed. Sauté chopped onions and minced garlic until soft and fragrant, about 2-3 minutes.
  5. In a large bowl, combine the ground chicken, ground beef, sautéed onions and garlic, crumbled bacon, ranch seasoning, cream cheese, and shredded cheese. Mix everything until well combined.
  6. Generously fill each prepared pepper with the filling mixture, pressing it down slightly to pack it in.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the filling is cooked through.
  8. Once baked, let the stuffed peppers cool for a few minutes. You can garnish with additional shredded cheese, chopped green onions, or fresh herbs before serving.
