Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides. Lightly grease the parchment paper.
  2. In a medium bowl, mash the very ripe bananas with a fork until mostly smooth but still with a few small lumps. Set aside.
  3. In a large mixing bowl, combine the melted unsalted butter, granulated sugar, and light brown sugar. Whisk until well combined and the sugars start to dissolve into the butter. Add the room temperature eggs one at a time, beating well after each addition until the mixture is light and fluffy. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and half a teaspoon of ground cinnamon until thoroughly combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand with a spatula until just combined. Avoid overmixing.
