  • 1 pound of chicken breast, diced
  • 1 cup of honey
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • 1 teaspoon of black pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 8 ounces of elbow macaroni
  • 2 cups of shredded sharp cheddar cheese
  • 1 cup of milk
  • 2 tablespoons of butter
  • 1/4 cup of all-purpose flour
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of paprika (optional)
  • 1/4 cup of chopped green onions (for garnish)

Instructions

  1. In a medium bowl, combine the diced chicken breast, honey, soy sauce, black pepper, garlic powder, and onion powder. Mix well to ensure the chicken is evenly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.
  2. After marinating, heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the marinated chicken to the skillet. Cook the chicken for about 7-10 minutes, stirring occasionally, until it is golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and set it aside.
  3. In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain the pasta and set it aside.
  4. In the same pot used for the pasta, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 1-2 minutes until it turns a light golden color.
  5. Gradually pour in the milk while whisking constantly to avoid lumps. Continue to whisk until the mixture thickens, about 3-5 minutes.
  6. Reduce the heat to low and add the shredded cheddar cheese. Stir until the cheese is completely melted and the sauce is smooth. Optionally, add paprika for extra flavor.
  7. Taste the cheese sauce and add salt as needed.
  8. Add the drained macaroni and cooked chicken to the cheese sauce. Stir gently to combine, ensuring everything is well coated.
  9. If the mac and cheese seems too thick, add a splash of milk to reach your desired consistency.
  10. Transfer the honey pepper chicken mac and cheese to a serving dish and sprinkle with chopped green onions.
  11. Serve warm as a comforting main dish or side.
  12. Preheat your oven to 350°F (175°C).
