- 1 pound baby potatoes, halved

Instructions
- In a medium-sized bowl, combine honey, soy sauce, olive oil, minced garlic, grated ginger, black pepper, and sesame oil. Whisk until well blended.
- Add beef sirloin pieces to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes (or longer for enhanced flavor).
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, toss halved baby potatoes with olive oil, chopped rosemary, and a pinch of salt until evenly coated.
- Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet.
- Roast the potatoes in the preheated oven for 25-30 minutes, or until golden brown and fork-tender. Toss halfway through for even cooking.
- Heat a large skillet or wok over medium-high heat and add a splash of olive oil.
- Remove beef from the marinade, allowing excess to drip off (reserve marinade).
- Add beef to the skillet in a single layer, cooking for 2-3 minutes on each side until browned and cooked to your liking. Remove from skillet and set aside.
- In the same skillet, pour in the reserved marinade and bring to a simmer over medium heat, scraping up browned bits from the pan.
