  • 1/2 teaspoon black pepper
  • 1 teaspoon sesame oil
  • 1 pound baby potatoes, halved
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium-sized bowl, combine honey, soy sauce, olive oil, minced garlic, grated ginger, black pepper, and sesame oil. Whisk until well blended.
  2. Add beef sirloin pieces to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes (or longer for enhanced flavor).
  3. Preheat your oven to 400°F (200°C).
  4. In a large mixing bowl, toss halved baby potatoes with olive oil, chopped rosemary, and a pinch of salt until evenly coated.
  5. Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet.
  6. Roast the potatoes in the preheated oven for 25-30 minutes, or until golden brown and fork-tender. Toss halfway through for even cooking.
  7. Heat a large skillet or wok over medium-high heat and add a splash of olive oil.
  8. Remove beef from the marinade, allowing excess to drip off (reserve marinade).
  9. Add beef to the skillet in a single layer, cooking for 2-3 minutes on each side until browned and cooked to your liking. Remove from skillet and set aside.
  10. In the same skillet, pour in the reserved marinade and bring to a simmer over medium heat, scraping up browned bits from the pan.
  11. Simmer for 5-7 minutes until the sauce thickens slightly.
  12. Return the cooked beef to the skillet, tossing to coat in the sauce.
  13. Add the roasted potatoes to the skillet and gently toss to combine.
